FAQs
How will my meat get to me?
If you are local to the Black Hills, or will be passing through, we will coordinate a pick up location. Shipping is available for an additional fee.
Do you raise the beef?
Yes! Every single pound of beef that we sell was born and raised on our South Dakota cattle ranch. Upon finishing, it is then brought to a local USDA processing facility, which is owned and operated by another family ranch, to be processed into cuts for your freezer.
What do you feed your cattle?
Our cattle always have full access to lush Black Hills pastures, full of native grasses and fresh spring water. In the winter, we supplement with high quality hay to keep them in prime condition. They also have free choice access to high-quality salt and minerals, which are essential to their well-being. Steers that are specially chosen for our Ranch-to-Table beef program are kept in closer during their second year, always on free-choice hay and/or pasture, and are also fed a mixture of corn and dried distillers feed as we come towards harvesting time.
What does it mean when you say “dry aged?”
Most meat in the grocery store is wet-aged. Meaning, the animal is harvested and packaged the same day or shortly thereafter. We use a long dry-aging process, 21-24 days, in which the carcass is kept in a temperature-controlled environment for 21-24 days to age the beef before cutting to our specifications. This draws out excess water weight and increases the flavor and tenderness of the beef. You pay for full flavor beef, not water, when you buy our beef!
